King's Ranch ChickenKINGS RANCH CHICKEN
1 large fryer or 4 chicken breasts boiled
1 large onion, peeled, chopped
1 large green bell pepper, chopped (seeded)
crushed tortillas (about 4 cups)
1 pound cheddar cheese, grated
1 1/2 tsps chili powder
garlic salt, to taste
1 (10 1/2 oz) can cream of chicken soup
1 (10 1/2 oz) can cream of mushroom soup
1/2 cup sour cream
3/4 cup chicken broth
1 small can mushrooms
1 (10 1/2 oz) can Rotel tomatoes and green chilis
Remove skin and bones from chicken and cut in small pieces; mix with onions and
green peppers (saute in butter).
Cover botton of a greased 9 by 13 by 2 in oven-proof casserole dish with tortilla chips,
add chicken and onions and pepper. Mix soups and Rotel and mushrooms and add to
casserole, sprinkle chili powder and salt over this and top with grated cheddar.
Bake at 350 degrees about 40 minutes.
